Spaghetti Carbonara

Ingredients:

  • 200 g spaghetti

  • 100 g pancetta or bacon (diced)

  • 2 large eggs

  • 1/2 cup grated Parmesan or Pecorino cheese

  • 2 cloves garlic (optional)

  • Salt and black pepper (to taste)

  • 1 tbsp olive oil

Instructions:

  1. Cook the pasta: Boil spaghetti in salted water according to package instructions. Reserve 1/4 cup pasta water, then drain.

  2. Cook pancetta: Heat olive oil in a pan over medium heat. Add pancetta (and garlic if using) and cook until crispy.

  3. Prepare egg mixture: In a bowl, whisk eggs and grated cheese. Add black pepper.

  4. Combine pasta and pancetta: Add hot drained pasta to the pan with pancetta. Remove from heat.

  5. Add egg sauce: Quickly pour in the egg mixture and toss well. Add a little reserved pasta water to create a creamy sauce.

  6. Serve: Plate immediately and top with extra cheese and pepper.
