Spaghetti Carbonara
Ingredients:
200 g spaghetti
100 g pancetta or bacon (diced)
2 large eggs
1/2 cup grated Parmesan or Pecorino cheese
2 cloves garlic (optional)
Salt and black pepper (to taste)
1 tbsp olive oil
Instructions:
Cook the pasta: Boil spaghetti in salted water according to package instructions. Reserve 1/4 cup pasta water, then drain.
Cook pancetta: Heat olive oil in a pan over medium heat. Add pancetta (and garlic if using) and cook until crispy.
Prepare egg mixture: In a bowl, whisk eggs and grated cheese. Add black pepper.
Combine pasta and pancetta: Add hot drained pasta to the pan with pancetta. Remove from heat.
Add egg sauce: Quickly pour in the egg mixture and toss well. Add a little reserved pasta water to create a creamy sauce.
Serve: Plate immediately and top with extra cheese and pepper.
